- 1 pound extra-sharp white cheddar cheese, grated
Instructions
- Cook the pasta: In a large pot or Dutch oven, cook your pasta shells according to package directions. Drain and set aside.
- Melt the butter: In the same pot, add the butter and heat it over medium.
- Prepare the roux: Once the butter melts, sprinkle in the flour, mustard, onion powder, garlic powder, pepper, and optional cayenne. Whisk constantly until smooth.
- Incorporate the milk: Gradually whisk in the milk.
- Melt the cheese: Once the mixture warms, add the grated white cheddar cheese, whisking until melted.
- Combine with pasta: Stir in the cooked pasta until fully coated in the cheese sauce.
