- 1 cup brown sugar, packed
- 2 large eggs

- For the Topping:
- 2 cups sweetened shredded coconut
- 1 cup semi-sweet chocolate chips
- 1 cup whole almonds
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy, about 3-4 minutes.
- Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, mixing until just combined.
- Spread the cookie dough evenly into a greased 9×13 inch baking pan.
- Bake in the preheated oven for 20-25 minutes, or until the edges are golden brown and a toothpick inserted in the center comes out clean.
- While the cookie base is baking, prepare the topping by mixing the shredded coconut, chocolate chips, and whole almonds in a bowl.
- Once the cookie base is done, remove it from the oven and immediately sprinkle the coconut mixture evenly over the top. Return to the oven and bake for an additional 10-12 minutes, until the coconut is lightly toasted.
- Allow to cool completely in the pan before cutting into bars.
Notes
- These bars can be made ahead of time and stored in an airtight container for up to 5 days.
- For longer storage, freeze the bars for up to 3 months. Thaw in the refrigerator before serving.
