Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
  3. Add the eggs one at a time, mixing well after each addition, then stir in the almond extract.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Pour the batter into a greased 9-inch round cake pan and smooth the top.
  7. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  9. While the cake cools, prepare the mascarpone cream by whipping the heavy cream until soft peaks form, then gently fold in the mascarpone cheese, powdered sugar, and vanilla extract until smooth.
  10. Once the cake is completely cool, spread the mascarpone cream evenly on top and garnish with slivered almonds and fresh berries if desired.
