- 4 chicken thighs
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1 onion, chopped
- 1 cup frozen peas and carrots
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 2 tablespoons butter
Instructions
- Preheat the oven to 375°F (190°C).
- In a large baking dish, combine the rice, chicken broth, chopped onion, peas, carrots, garlic powder, onion powder, salt, and pepper.
- Place the chicken thighs on top of the rice mixture.
- Dot the chicken with butter.
- Cover the dish with aluminum foil and bake for 45 minutes.
- Remove the foil and bake for an additional 15-20 minutes, or until the chicken is cooked through and the rice is tender.

- For added flavor, marinate the chicken in your favorite spices before baking.
- This dish can be made with bone-in or boneless chicken.
