Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together the dry ingredients: flour, baking soda, baking powder, cinnamon, nutmeg, ginger, and salt.
  3. In another bowl, cream the softened butter, brown sugar, and granulated sugar until light and fluffy, about 3-4 minutes.
  4. Add the egg, vanilla extract, and apple cider to the butter mixture, mixing until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. If using, fold in the chopped apples and nuts.
  7. Drop tablespoon-sized balls of dough onto a parchment-lined baking sheet, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes, or until the edges are lightly golden and the centers are set but still soft.
  9. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
