Description

Apple Cinnamon Breakfast Quesadillas are a delightful fusion of crispy tortillas filled with warm, spiced apples and creamy cheese. Each bite offers a satisfying crunch followed by a sweet, gooey interior that tantalizes the taste buds with hints of cinnamon and vanilla.

Ingredients

  • Tortillas: 4 large flour tortillas
  • Apples: 2 medium Granny Smith apples, peeled, cored, and diced
  • Cinnamon Sugar Mixture: 1 teaspoon ground cinnamon, 2 tablespoons granulated sugar
  • Cheese: 1 cup shredded sharp cheddar cheese
  • Butter: 2 tablespoons unsalted butter
  • Vanilla Extract: 1 teaspoon pure vanilla extract

Instructions

  1. In a medium bowl, combine diced apples, cinnamon, sugar, and vanilla extract. Mix well and set aside.
  2. Heat 1 tablespoon of butter in a large skillet over medium heat until melted.
  3. Place one tortilla in the skillet and sprinkle half of the cheese evenly over the tortilla.
  4. Spread half of the apple mixture over the cheese, then top with the remaining cheese.
  5. Cover with a second tortilla and cook for 3-4 minutes, or until the bottom is golden brown.
  6. Carefully flip the quesadilla and add the remaining butter to the skillet. Cook for another 3-4 minutes until the second side is golden and the cheese is melted.
  7. Remove from the skillet and let cool for a minute before slicing into wedges.
  8. Repeat with the remaining tortillas and filling.

Notes

  • Make-ahead: The apple mixture can be prepared a day in advance and stored in the refrigerator.
  • Storage: Store leftovers in an airtight container in the fridge for up to 3 days.
  • Substitutions: Use whole wheat tortillas for a healthier option or swap cheddar for cream cheese for a creamier texture.
