- 2 pounds fresh asparagus (trimmed)
- 5 tablespoons unsalted butter (divided)
- 2 tablespoons all-purpose flour
- 1 teaspoon garlic powder
- ½ teaspoon salt (or to taste)
- ½ teaspoon ground black pepper
- 2 cups heavy cream
- 1 cup freshly grated parmesan cheese (divided)
- ½ cup shredded mozzarella cheese
- ½ cup panko breadcrumbs
Instructions
- Preheat your oven to 400°F (200°C) and prepare a 9×13-inch baking dish with cooking spray.
- Layer the trimmed asparagus neatly in the dish and set aside.
- Melt 3 tablespoons of butter in a small saucepan over medium-high heat.
- Add flour, garlic powder, salt, and pepper to the melted butter, whisking continuously for 1-2 minutes until thickened into a roux.
- Pour in the heavy cream slowly while whisking. Allow it to simmer for 3-5 minutes until it thickens.
- Remove from heat and whisk in ½ cup of parmesan cheese until smooth.
- Pour the sauce evenly over the asparagus.
- Melt the remaining 2 tablespoons of butter in a microwave-safe bowl, about 30 seconds.
- Combine panko breadcrumbs with the remaining parmesan and mozzarella cheese in the bowl with melted butter.
- Sprinkle the topping evenly over the asparagus and sauce.
- Bake for 15-20 minutes until the topping is golden brown. Serve immediately.
Notes
Make-ahead by assembling and refrigerating without baking. Use air fryer for a crispy topping in about 10-15 minutes.
