Description

A rich and creamy asparagus casserole topped with crispy panko breadcrumbs and melted cheese, perfect for any gathering.


Ingredients

  • 2 pounds fresh asparagus (trimmed)
  • 5 tablespoons unsalted butter (divided)
  • 2 tablespoons all-purpose flour
  • 1 teaspoon garlic powder
  • ½ teaspoon salt (or to taste)
  • ½ teaspoon ground black pepper
  • 2 cups heavy cream
  • 1 cup freshly grated parmesan cheese (divided)
  • ½ cup shredded mozzarella cheese
  • ½ cup panko breadcrumbs

Instructions

  1. Preheat your oven to 400°F (200°C) and prepare a 9×13-inch baking dish with cooking spray.
  2. Layer the trimmed asparagus neatly in the dish and set aside.
  3. Melt 3 tablespoons of butter in a small saucepan over medium-high heat.
  4. Add flour, garlic powder, salt, and pepper to the melted butter, whisking continuously for 1-2 minutes until thickened into a roux.
  5. Pour in the heavy cream slowly while whisking. Allow it to simmer for 3-5 minutes until it thickens.
  6. Remove from heat and whisk in ½ cup of parmesan cheese until smooth.
  7. Pour the sauce evenly over the asparagus.
  8. Melt the remaining 2 tablespoons of butter in a microwave-safe bowl, about 30 seconds.
  9. Combine panko breadcrumbs with the remaining parmesan and mozzarella cheese in the bowl with melted butter.
  10. Sprinkle the topping evenly over the asparagus and sauce.
  11. Bake for 15-20 minutes until the topping is golden brown. Serve immediately.

Notes

Make-ahead by assembling and refrigerating without baking. Use air fryer for a crispy topping in about 10-15 minutes.
