Description

Ingredients

  • 1 lb kielbasa, sliced
  • 2 cups Brussels sprouts, halved
  • 2 cups sweet potatoes, cubed
  • 1 red onion, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine the sliced kielbasa, Brussels sprouts, sweet potatoes, and red onion.
  3. Drizzle with olive oil and sprinkle with garlic powder, smoked paprika, salt, and pepper. Toss to coat evenly.
  4. Spread the mixture in a single layer on a sheet pan.
  5. Bake for 25-30 minutes, stirring halfway through, until the vegetables are tender and the kielbasa is browned.
