- 4 large eggs
- 2 sheets of puff pastry
- 1 cup of ricotta cheese
- 1 cup of grated mozzarella cheese
- 1/2 cup of grated Parmesan cheese
- 1 tablespoon of fresh parsley, chopped
- Salt and pepper to taste
- Olive oil for brushing
Instructions
- Preheat the oven to 375°F (190°C).
- Roll out the puff pastry sheets and cut them into squares.
- Place the pastry squares on a baking sheet lined with parchment paper.
- In a bowl, mix the ricotta cheese, mozzarella cheese, parsley, salt, and pepper.
- Spread the cheese mixture on top of the pastry squares.
- Make a small well in the center of each cheese-topped pastry and crack an egg into each well.
- Sprinkle Parmesan cheese on top of the eggs.
