- 300g pasta (penne or fusilli)
- 500g cherry tomatoes
- 3 tablespoons olive oil
- 3 cloves garlic, minced
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Prepare the baking dish: In a medium-sized baking dish, place the cherry tomatoes all around the feta cheese block at the center.
- Season: Drizzle olive oil over the tomatoes and feta. Generously sprinkle with salt, pepper, and minced garlic.
- Bake: Place the dish in the oven and let it bake for 25-30 minutes until tomatoes blister and feta becomes gooey.
- Cook the pasta: While the tomatoes and feta bake, bring a large pot of salted water to a boil, and cook the pasta according to package instructions until al dente.
- Combine: Once out of the oven, stir the melted feta and roasted tomatoes together in their juices. Toss in the cooked pasta until well-coated.
- Garnish and serve: Finish with a sprinkle of fresh basil and serve warm.
