  • For the Chicken:
    • 4 boneless, skinless chicken breasts (about 1.5 lbs)
    • 2 tablespoons olive oil
    • 2 teaspoons dried oregano
    • 2 teaspoons dried thyme
    • 1 teaspoon garlic powder
    • Salt and pepper to taste
  • For the Vegetables:
    • 2 medium zucchinis, sliced into half-moons
    • 1 pint cherry tomatoes, halved
    • 1 tablespoon balsamic vinegar
    • 1 tablespoon fresh basil, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine olive oil, oregano, thyme, garlic powder, salt, and pepper. Add the chicken breasts and coat them evenly with the herb mixture.
  3. Place the chicken breasts in a baking dish and arrange the zucchini and cherry tomatoes around them.
  4. Drizzle the balsamic vinegar over the vegetables and season with additional salt and pepper.
  5. Bake in the preheated oven for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the vegetables are tender.
  6. Remove from the oven and let rest for 5 minutes before serving. Garnish with fresh basil.
