Ingredients

  • 2 cups fresh rhubarb, chopped
  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cardamom
  • 1/4 teaspoon salt
  • 1 large egg
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • Oil for frying
  • Powdered sugar for dusting

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Combine flour, sugar, baking powder, cinnamon, cardamom, and salt in a mixing bowl.
  3. Whisk in another bowl the egg, milk, and vanilla extract until frothy.
  4. Add the wet ingredients to the dry ingredients and mix gently.
  5. Fold in the rhubarb pieces.
  6. Heat oil in a deep skillet or pot over medium heat to 350°F (175°C).
  7. Drop spoonfuls of the batter into the hot oil, frying until golden brown.
  8. Remove the fritters and place them on paper towels to drain excess oil.
  9. Transfer to a baking sheet and bake for 10-12 minutes.
  10. Dust with powdered sugar before serving.
