- 2 cups fresh rhubarb, chopped
- 1 cup all-purpose flour
- 1/2 cup sugar
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground cardamom
- 1/4 teaspoon salt
- 1 large egg
- 1/2 cup milk
- 1 teaspoon vanilla extract
- Oil for frying
- Powdered sugar for dusting
Instructions
- Preheat the oven to 375°F (190°C).
- Combine flour, sugar, baking powder, cinnamon, cardamom, and salt in a mixing bowl.
- Whisk in another bowl the egg, milk, and vanilla extract until frothy.
- Add the wet ingredients to the dry ingredients and mix gently.
- Fold in the rhubarb pieces.
- Heat oil in a deep skillet or pot over medium heat to 350°F (175°C).
- Drop spoonfuls of the batter into the hot oil, frying until golden brown.
- Remove the fritters and place them on paper towels to drain excess oil.
- Transfer to a baking sheet and bake for 10-12 minutes.
- Dust with powdered sugar before serving.
Notes
