Ingredients

  • 1 pound fresh salmon, skin removed
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 tablespoons fresh parsley, chopped
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • 2 ripe avocados
  • 1 tablespoon lime juice
  • 1/4 cup Greek yogurt

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pulse the salmon in a food processor until coarsely chopped.
  3. Combine the chopped salmon with breadcrumbs, Parmesan cheese, egg, parsley, minced garlic, salt, and pepper in a mixing bowl.
  4. Form the mixture into small meatballs and place them on a baking sheet lined with parchment paper.
  5. Bake for 15-20 minutes until golden and firm to the touch.
  6. Mash the avocados in a bowl and mix with lime juice, Greek yogurt, salt, and pepper until smooth.
  7. Serve warm with the avocado sauce on the side.
