- 1 pound fresh salmon, skin removed
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 2 tablespoons fresh parsley, chopped
- 1 clove garlic, minced
- Salt and pepper to taste
- 2 ripe avocados
- 1 tablespoon lime juice
- 1/4 cup Greek yogurt
Instructions
- Preheat your oven to 400°F (200°C).
- Pulse the salmon in a food processor until coarsely chopped.
- Combine the chopped salmon with breadcrumbs, Parmesan cheese, egg, parsley, minced garlic, salt, and pepper in a mixing bowl.
- Form the mixture into small meatballs and place them on a baking sheet lined with parchment paper.
- Bake for 15-20 minutes until golden and firm to the touch.
- Mash the avocados in a bowl and mix with lime juice, Greek yogurt, salt, and pepper until smooth.
- Serve warm with the avocado sauce on the side.
