Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/2 cup balsamic vinegar
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 2 cups diced watermelon
  • 1/4 cup chopped fresh mint
  • 1/4 cup crumbled feta cheese
  • Juice of 1 lime

Instructions

  1. In a bowl, mix balsamic vinegar, olive oil, salt, and pepper. Add chicken breasts and marinate for at least 30 minutes.
  2. Preheat the grill to medium-high heat.
  3. Grill the chicken for 6-7 minutes on each side or until fully cooked.
  4. In a separate bowl, combine diced watermelon, mint, feta cheese, and lime juice to make the salsa.
  5. Serve the grilled chicken topped with watermelon salsa.
