Bang Bang Chicken Skewers are a delightful fusion of juicy, tender chicken marinated in a spicy, creamy sauce, grilled to perfection. Each bite offers a satisfying crunch from the crispy exterior, followed by a burst of flavor that dances on the palate, leaving you craving more.

Ingredients

Scale
  • Chicken: 1 pound boneless, skinless chicken breasts, cut into 1-inch cubes
  • Marinade:
    • 1/2 cup mayonnaise
    • 1/4 cup sweet chili sauce
    • 2 tablespoons sriracha sauce
    • 1 tablespoon soy sauce
    • 1 teaspoon garlic powder
  • Skewers: 8-10 wooden or metal skewers
  • Garnish:
    • Chopped green onions, for serving
    • Sesame seeds, for serving

Instructions

  1. In a bowl, combine mayonnaise, sweet chili sauce, sriracha, soy sauce, and garlic powder to create the marinade.
  2. Add the chicken cubes to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes.
  3. If using wooden skewers, soak them in water for 30 minutes to prevent burning.
  4. Preheat the grill to medium-high heat (about 400°F).
  5. Thread the marinated chicken onto the skewers, leaving a little space between each piece.
  6. Grill the skewers for 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
  7. Remove from the grill and let rest for 5 minutes before serving.
  8. Garnish with chopped green onions and sesame seeds before serving.

Notes

  • Make-ahead: The chicken can be marinated up to 24 hours in advance for deeper flavor.
  • Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Substitutions: Use tofu or shrimp for a different protein option.
