Description

Ingredients

  • Rice: 3 cups cooked jasmine rice, preferably day-old for better texture
  • Vegetables: 1 cup diced bell peppers, 1 cup frozen peas, 1 cup shredded carrots
  • Protein: 1 cup cooked shrimp or chicken, diced
  • Bang Bang Sauce: 1/2 cup mayonnaise, 1/4 cup sweet chili sauce, 1 tablespoon sriracha, 1 teaspoon lime juice
  • Garnish: 2 green onions, sliced, 1 tablespoon sesame seeds

Instructions

  1. Heat 2 tablespoons of vegetable oil in a large skillet over medium-high heat until shimmering.
  2. Add the cooked rice and stir-fry for about 5-7 minutes until it starts to turn golden and crispy.
  3. In a separate bowl, mix together the mayonnaise, sweet chili sauce, sriracha, and lime juice to create the Bang Bang sauce.
  4. Add the diced bell peppers, peas, and carrots to the rice, cooking for an additional 3-4 minutes until the vegetables are tender.
  5. Stir in the cooked shrimp or chicken and half of the Bang Bang sauce, mixing well to combine.
  6. Cook for another 2 minutes, ensuring everything is heated through and well-coated.
  7. Remove from heat and drizzle the remaining sauce over the top, garnishing with green onions and sesame seeds.
