Description

Delicious sweet potatoes stuffed with BBQ chicken, topped with cheddar cheese, cilantro, and sour cream.


Ingredients

  • 2 medium sweet potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups cooked chicken, shredded
  • 1/2 cup BBQ sauce
  • 1/4 cup red onion, finely chopped
  • 1/4 cup cilantro, chopped
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1 tablespoon lime juice

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Prep the sweet potatoes by scrubbing them under cold running water and pricking them with a fork.
  3. Season the sweet potatoes with olive oil, salt, and black pepper, then place them on a baking sheet.
  4. Bake for 45–60 minutes until tender.
  5. Prepare the filling by mixing shredded chicken with BBQ sauce and chopping red onion and cilantro.
  6. Stuff the sweet potatoes with the BBQ chicken mixture and top with cheddar cheese.
  7. Bake again for 5–7 minutes until cheese is melted.
  8. Final touches include topping with red onion, cilantro, sour cream, and a squeeze of lime juice.
  9. Serve warm and enjoy!
