- 2 medium sweet potatoes
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups cooked chicken, shredded
- 1/2 cup BBQ sauce
- 1/4 cup red onion, finely chopped
- 1/4 cup cilantro, chopped
- 1/2 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1 tablespoon lime juice
Instructions
- Preheat the oven to 400°F (200°C).
- Prep the sweet potatoes by scrubbing them under cold running water and pricking them with a fork.
- Season the sweet potatoes with olive oil, salt, and black pepper, then place them on a baking sheet.
- Bake for 45–60 minutes until tender.
- Prepare the filling by mixing shredded chicken with BBQ sauce and chopping red onion and cilantro.
- Stuff the sweet potatoes with the BBQ chicken mixture and top with cheddar cheese.
- Bake again for 5–7 minutes until cheese is melted.
- Final touches include topping with red onion, cilantro, sour cream, and a squeeze of lime juice.
- Serve warm and enjoy!
