Each spoonful offers a delightful contrast of textures, with the smoothness of the pudding and the crispiness of the cookie crumble, all enhanced by a rich caramel drizzle that adds a touch of sweetness.
Ingredients
Scale
- For the Pudding:
- 2 ripe bananas, sliced
- 2 cups whole milk
- 1 cup heavy cream
- 3/4 cup granulated sugar
- 1/4 cup cornstarch
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- For the Biscoff Layer:
- 1 1/2 cups Biscoff cookies, crushed
- 1/2 cup unsalted butter, melted
- For the Caramel Sauce:
- 1 cup granulated sugar
- 1/4 cup water
- 1/2 cup heavy cream
- 1 tablespoon unsalted butter
Instructions
- In a medium saucepan, whisk together the sugar, cornstarch, and salt. Gradually add the milk and heavy cream, stirring constantly over medium heat until the mixture thickens and begins to bubble, about 8-10 minutes.
- Remove from heat and stir in the vanilla extract. Allow the pudding to cool slightly before layering.
- In a separate bowl, combine the crushed Biscoff cookies with melted butter until well mixed.
- In a small saucepan, combine sugar and water over medium heat to make the caramel sauce. Cook until the sugar dissolves and turns a golden amber color, about 5-7 minutes. Remove from heat and carefully stir in the heavy cream and butter until smooth.
- In a serving dish, layer half of the Biscoff mixture, followed by half of the banana slices, and half of the pudding. Repeat the layers.
- Drizzle the caramel sauce over the top and refrigerate for at least 4 hours before serving.
