    • 1 1/2 cups Biscoff cookies, crushed

    • 1/4 cup water
    • 1/2 cup heavy cream
    • 1 tablespoon unsalted butter

Instructions

  1. In a medium saucepan, whisk together the sugar, cornstarch, and salt. Gradually add the milk and heavy cream, stirring constantly over medium heat until the mixture thickens and begins to bubble, about 8-10 minutes.
  2. Remove from heat and stir in the vanilla extract. Allow the pudding to cool slightly before layering.
  3. In a separate bowl, combine the crushed Biscoff cookies with melted butter until well mixed.
  4. In a small saucepan, combine sugar and water over medium heat to make the caramel sauce. Cook until the sugar dissolves and turns a golden amber color, about 5-7 minutes. Remove from heat and carefully stir in the heavy cream and butter until smooth.
  5. In a serving dish, layer half of the Biscoff mixture, followed by half of the banana slices, and half of the pudding. Repeat the layers.
  6. Drizzle the caramel sauce over the top and refrigerate for at least 4 hours before serving.
