  • Brownie Base:
    • 1 cup unsalted butter (melted)
    • 2 cups granulated sugar
    • 4 large eggs
    • 1 teaspoon vanilla extract
    • 1 cup all-purpose flour
    • 1 cup unsweetened cocoa powder
    • 1/2 teaspoon salt
  • Biscoff Swirl:
    • 1 cup Biscoff spread
    • 1/2 cup crushed Biscoff cookies

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a large bowl, mix the melted butter and sugar until well combined.
  3. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, cocoa powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Pour half of the brownie batter into the prepared pan and smooth it out.
  7. In a microwave-safe bowl, warm the Biscoff spread for about 20 seconds until it’s pourable.
  8. Drizzle half of the warmed Biscoff spread over the brownie batter, then sprinkle half of the crushed cookies on top.
  9. Pour the remaining brownie batter over the Biscoff layer and smooth it out.
  10. Drizzle the remaining Biscoff spread on top and swirl it gently with a knife. Sprinkle the remaining crushed cookies over the top.
  11. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
  12. Let the brownies cool in the pan for at least 20 minutes before cutting into squares.

Notes

  • These brownies can be made ahead of time and stored in an airtight container for up to 5 days.
