- 4 oz cream cheese, softened
- 1 cup chocolate chips (milk or dark)
- 1 tablespoon coconut oil (optional)
- Additional crushed Biscoff cookies for coating
Instructions
- Crush the Biscoff cookies into fine crumbs using a food processor.
- In a mixing bowl, combine the crushed cookies with softened cream cheese until well blended.
- Roll the mixture into small balls and place them on a baking sheet lined with parchment paper.
- Chill the truffles in the refrigerator for about 30 minutes to firm up.
- Meanwhile, melt the chocolate chips and coconut oil in a microwave or double boiler until smooth.
- Dip each truffle into the melted chocolate, allowing excess to drip off.
- Roll the chocolate-coated truffles in additional crushed Biscoff cookies for coating.
- Place the coated truffles back on the baking sheet and refrigerate until the chocolate is set.
