Ingredients
- Bread: 4 slices of sourdough or whole grain bread
- Cheese: 1 cup shredded sharp cheddar cheese
- Black Beans: 1 cup canned black beans, rinsed and drained
- Spices: 1 tsp cumin, 1/2 tsp smoked paprika, 1/4 tsp garlic powder
- Butter: 2 tbsp unsalted butter, softened
- Optional: 1/4 cup diced jalapeños for heat
Instructions
- In a bowl, mash the black beans with a fork until slightly chunky.
- Mix in cumin, smoked paprika, garlic powder, and jalapeños (if using) until well combined.
- Spread butter on one side of each slice of bread.
- On the unbuttered side of two slices, layer half of the cheese, followed by the black bean mixture, and then the remaining cheese.
- Top with the other two slices of bread, buttered side up.
- Heat a skillet over medium heat and place the sandwiches in the skillet.
