Ingredients

  • Bread: 4 slices of sourdough or whole grain bread
  • Cheese: 1 cup shredded sharp cheddar cheese
  • Black Beans: 1 cup canned black beans, rinsed and drained
  • Spices: 1 tsp cumin, 1/2 tsp smoked paprika, 1/4 tsp garlic powder
  • Butter: 2 tbsp unsalted butter, softened
  • Optional: 1/4 cup diced jalapeños for heat

Instructions

  1. In a bowl, mash the black beans with a fork until slightly chunky.
  2. Mix in cumin, smoked paprika, garlic powder, and jalapeños (if using) until well combined.
  3. Spread butter on one side of each slice of bread.
  4. On the unbuttered side of two slices, layer half of the cheese, followed by the black bean mixture, and then the remaining cheese.
  5. Top with the other two slices of bread, buttered side up.
  6. Heat a skillet over medium heat and place the sandwiches in the skillet.
  7. Cook for 3-4 minutes until golden brown, then carefully flip and cook for another 3-4 minutes until the cheese is melted and the bread is crispy.

Notes

  • This sandwich can be made ahead by preparing the black bean mixture and storing it in the fridge for up to 2 days.
