- 1 cup unsalted butter, softened
- 1/2 cup powdered sugar, plus more for dusting
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- 2 cups all-purpose flour
- 1/2 cup ground almonds
- 1/4 teaspoon salt
- 3/4 cup blueberry jam or fresh blueberries
Instructions
- Preheat your oven to 350°F (175°C).
- Cream together the softened butter and 1/2 cup powdered sugar until light and fluffy.
- Mix in the vanilla and almond extracts.
- Whisk together the flour, ground almonds, and salt in another bowl.
- Add the dry ingredients to the wet ingredients, mixing until just combined.
- Take a tablespoon of dough and create a ball, flatten it slightly, and make a well in the center.
- Place a small amount of blueberry jam or a fresh blueberry inside and fold the dough around it.
- Roll the stuffed dough into a ball again.
- Place cookies on a baking sheet lined with parchment paper.
- Bake for 12-15 minutes, or until the bottoms are lightly golden.
- Allow cookies to cool slightly, then roll in powdered sugar.
Notes
For variations, substitute blueberry jam with your favorite jam or fresh fruit.
