Description

Deliciously crumbly cookies with a blueberry jam filling, dusted in powdered sugar for a sweet treat.


Ingredients

  • 1/2 cup powdered sugar, plus more for dusting
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 2 cups all-purpose flour
  • 1/2 cup ground almonds
  • 1/4 teaspoon salt
  • 3/4 cup blueberry jam or fresh blueberries

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter and 1/2 cup powdered sugar until light and fluffy.
  3. Mix in the vanilla and almond extracts.
  4. Whisk together the flour, ground almonds, and salt in another bowl.
  5. Add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Take a tablespoon of dough and create a ball, flatten it slightly, and make a well in the center.
  7. Place a small amount of blueberry jam or a fresh blueberry inside and fold the dough around it.
  8. Roll the stuffed dough into a ball again.
  9. Place cookies on a baking sheet lined with parchment paper.
  10. Bake for 12-15 minutes, or until the bottoms are lightly golden.
  11. Allow cookies to cool slightly, then roll in powdered sugar.

Notes

For variations, substitute blueberry jam with your favorite jam or fresh fruit.
