Ingredients

  • 4 chicken breasts
  • 1 cup fresh blueberries
  • 2 tablespoons fresh thyme, chopped
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1/2 cup chicken broth
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat and sauté garlic until fragrant.
  3. Add chicken breasts to the skillet and sear until golden brown on both sides.
  4. Transfer the chicken to a baking dish.
  5. In the same skillet, add chicken broth, blueberries, thyme, salt, and pepper. Stir to combine.
  6. Pour the blueberry mixture over the chicken in the baking dish.
  7. Bake in the preheated oven for 25-30 minutes or until the chicken is cooked through.
  8. Let it rest for a few minutes before serving.
