Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat and sauté garlic until fragrant.
- Add chicken breasts to the skillet and sear until golden brown on both sides.
- Transfer the chicken to a baking dish.
- In the same skillet, add chicken broth, blueberries, thyme, salt, and pepper. Stir to combine.
- Pour the blueberry mixture over the chicken in the baking dish.
- Bake in the preheated oven for 25-30 minutes or until the chicken is cooked through.
- Let it rest for a few minutes before serving.
