- 4 Bone-in Chicken Thighs
- Salt and Pepper (to taste)
- 2 tablespoons Olive Oil
- 3 cloves Garlic (minced)
- 1 tablespoon Rosemary (fresh or dried)
- 4 Potatoes (for a side)
- 1 cup Chicken Broth
- 2 tablespoons Butter (optional for gravy)
Instructions
- Preheat the oven to 400°F (200°C).
- Season the chicken thighs with salt, pepper, minced garlic, and rosemary.
- Sear the chicken in olive oil in a skillet over medium-high heat for 5 minutes on each side.
- Transfer the skillet to the oven and bake for 25-30 minutes, until the internal temperature reaches 165°F (75°C).
- Prepare the potatoes by peeling and chopping them; boil or roast until tender.
- Make the gravy by deglazing the skillet with chicken broth and simmering until reduced; whisk in butter if desired.
- Serve the chicken thighs with the potatoes and drizzle with gravy.
Notes
You can season the chicken thighs and refrigerate them for up to 24 hours before cooking for deeper flavor. An air fryer also works well, cooking the thighs in about 20-25 minutes.
