- For the Cookies:
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs

- For the Vanilla Custard Filling:
- 2 cups whole milk
- ½ cup granulated sugar
- ¼ cup cornstarch
- 4 large egg yolks

- For the Chocolate Ganache:
- 1 cup semi-sweet chocolate chips
- ½ cup heavy cream
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, cream together the softened butter and sugar until light and fluffy, about 3-4 minutes.
- Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add this dry mixture to the wet ingredients, mixing until just combined.
- Drop tablespoon-sized balls of dough onto a baking sheet lined with parchment paper, spacing them 2 inches apart.
- Bake for 10-12 minutes or until the edges are lightly golden. Remove from the oven and let cool completely on a wire rack.
- For the custard, in a saucepan, heat the milk over medium heat until steaming. In a separate bowl, whisk together the sugar, cornstarch, and egg yolks.
- Slowly pour the hot milk into the egg mixture, whisking constantly. Return the mixture to the saucepan and cook over medium heat, stirring until thickened, about 5-7 minutes. Stir in the vanilla extract and let cool.
- For the ganache, heat the heavy cream in a small saucepan until just boiling, then pour it over the chocolate chips in a bowl. Let sit for 2 minutes, then stir until smooth.
- Once the cookies are cool, pipe or spoon the custard filling onto the flat side of half the cookies, then top with the remaining cookies. Drizzle the chocolate ganache over the top and let set before serving.
