- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract (for cream)
- 4 ounces semi-sweet chocolate, chopped
- 2 tablespoons unsweetened cocoa powder
- 1/4 cup heavy cream (for glaze)
Instructions
- Preheat your oven to 350°F (175°C).
- Cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the eggs, one at a time, and stir in the vanilla extract.
- Whisk together the flour, baking powder, and salt in another bowl; gradually add to the creamed mixture until just mixed.
- Drop rounded tablespoonfuls of batter onto ungreased baking sheets, spacing them 2 inches apart.
- Bake for 10-12 minutes, until lightly golden around the edges.
- Remove and let cool on the baking sheet for a few minutes before transferring to a wire rack.
- Beat the heavy cream, powdered sugar, and vanilla in a bowl until stiff peaks form.
- Fill the cooled cookies with the vanilla cream.
- Melt the chopped chocolate and cocoa powder with the heavy cream over low heat until smooth.
- Drizzle or dip the filled cookies into the chocolate glaze.
- Let the cookies sit until the glaze has set.

Make ahead by preparing the dough a day in advance or freeze for longer storage. Ensure cookies are completely cool before filling.
