    • 1/2 cup bourbon
    • 1/4 cup brown sugar
    • 2 tablespoons soy sauce
    • 1 tablespoon Dijon mustard
    • 1 teaspoon minced garlic
    • 1 tablespoon lemon juice

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a saucepan over medium heat, combine diced peaches, bourbon, brown sugar, soy sauce, Dijon mustard, minced garlic, and lemon juice. Bring to a simmer and cook for 10 minutes until the mixture thickens slightly.
  3. While the glaze is cooking, prepare the salmon fillets by patting them dry and seasoning with olive oil, salt, and pepper.
  4. Place the salmon fillets on a baking sheet lined with parchment paper.
  5. Brush the bourbon peach glaze generously over the salmon fillets.
