Description

Indulge in the creamy, dreamy texture of Boursin Orzo with Chicken, where each bite is a delightful blend of tender orzo pasta enveloped in a rich, herb-infused cheese sauce. The juicy chicken adds a savory depth, making this dish a comforting yet elegant experience for your palate.

Ingredients

Scale
  • For the Orzo:
    • 1 cup orzo pasta
    • 4 cups chicken broth
  • For the Chicken:
    • 2 boneless, skinless chicken breasts (about 1 pound)
    • 1 tablespoon olive oil
    • Salt and pepper to taste
  • For the Sauce:
    • 8 ounces Boursin cheese (garlic and herb flavor)
    • 1/2 cup heavy cream
    • 1/2 cup grated Parmesan cheese
    • 1 cup fresh spinach, chopped

Instructions

  1. In a medium saucepan, bring the chicken broth to a boil over medium-high heat.
  2. Add the orzo pasta and cook for 8-10 minutes, stirring occasionally, until al dente. Drain and set aside.
  3. While the orzo cooks, heat olive oil in a skillet over medium heat. Season the chicken breasts with salt and pepper.
  4. Cook the chicken for 6-7 minutes on each side, or until golden brown and cooked through (internal temperature should reach 165°F). Remove from heat and let rest for 5 minutes before slicing.
  5. In the same skillet, reduce heat to low and add Boursin cheese, heavy cream, and Parmesan cheese. Stir until melted and creamy.
  6. Add the cooked orzo and chopped spinach to the sauce, stirring to combine. Cook for an additional 2-3 minutes until heated through.
  7. Serve the creamy orzo mixture topped with sliced chicken.

Notes

  • This dish can be made ahead of time and stored in the refrigerator for up to 3 days. Reheat gently on the stove with a splash of chicken broth to loosen the sauce.
  • For a lighter version, substitute the heavy cream with Greek yogurt or a plant-based cream alternative.
  • Leftover chicken can be used in salads or sandwiches for a quick meal.
