Ingredients
- Pork Chops: 4 bone-in pork chops, about 1 inch thick
- Boursin Cheese: 8 oz, garlic and herb flavor
- Spinach: 1 cup, fresh, chopped
- Olive Oil: 2 tablespoons
- Garlic: 2 cloves, minced
- Salt: 1 teaspoon
- Pepper: 1/2 teaspoon
- Parmesan Cheese: 1/4 cup, grated (for topping)
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet, heat 1 tablespoon of olive oil over medium heat and sauté the minced garlic until fragrant, about 1 minute.
- Add the chopped spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat and let cool slightly.
- In a bowl, combine the Boursin cheese and sautéed spinach, mixing well.
- Using a sharp knife, create a pocket in each pork chop by slicing horizontally, being careful not to cut all the way through.
- Stuff each pork chop with the Boursin and spinach mixture, securing with toothpicks if necessary.
- Season the outside of the pork chops with salt and pepper.
- In an oven-safe skillet, heat the remaining olive oil over medium-high heat. Sear the pork chops for 3-4 minutes on each side until golden brown.
- Sprinkle grated Parmesan cheese on top of the pork chops and transfer the skillet to the preheated oven.
- Bake for 20-25 minutes, or until the internal temperature reaches 145°F (63°C). Let rest for 5 minutes before serving.
