Ingredients

  • Pork Chops: 4 bone-in pork chops, about 1 inch thick
  • Boursin Cheese: 8 oz, garlic and herb flavor
  • Spinach: 1 cup, fresh, chopped
  • Olive Oil: 2 tablespoons
  • Garlic: 2 cloves, minced
  • Salt: 1 teaspoon
  • Pepper: 1/2 teaspoon
  • Parmesan Cheese: 1/4 cup, grated (for topping)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat 1 tablespoon of olive oil over medium heat and sauté the minced garlic until fragrant, about 1 minute.
  3. Add the chopped spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat and let cool slightly.
  4. In a bowl, combine the Boursin cheese and sautéed spinach, mixing well.
  5. Using a sharp knife, create a pocket in each pork chop by slicing horizontally, being careful not to cut all the way through.
  6. Stuff each pork chop with the Boursin and spinach mixture, securing with toothpicks if necessary.
  7. Season the outside of the pork chops with salt and pepper.
  8. In an oven-safe skillet, heat the remaining olive oil over medium-high heat. Sear the pork chops for 3-4 minutes on each side until golden brown.
  9. Sprinkle grated Parmesan cheese on top of the pork chops and transfer the skillet to the preheated oven.
  10. Bake for 20-25 minutes, or until the internal temperature reaches 145°F (63°C). Let rest for 5 minutes before serving.
