Description

Ingredients

  • 4 bone-in chicken thighs or breasts
  • 2 cups cherry tomatoes
  • 1 cup mixed olives (green and black)
  • 2 shallots, sliced
  • 4 cloves garlic, minced
  • 1 cup dry white wine
  • 2 tbsp olive oil
  • Salt and black pepper to taste
  • 2 tsp herbs de Provence

Instructions

  1. Heat the olive oil in a heavy-bottom skillet over medium heat until shimmering.
  2. Season the chicken with salt and pepper, then brown skin-side down for about 5-7 minutes.
  3. Remove the chicken and sauté sliced shallots and minced garlic for 2-3 minutes.
  4. Add cherry tomatoes and olives, stirring gently for a minute.
  5. Pour in the white wine, scraping the pan to deglaze and allow to simmer.
  6. Braise the chicken in the skillet, cover, and cook on low for 35-40 minutes.
  7. Serve warm, drizzling the sauce over the chicken.

Make-ahead magic: Allow flavors to meld overnight. Can substitute chicken broth for white wine if desired. Avoid overcrowding the pan for proper browning.
