- 4 bone-in chicken thighs or breasts
- 2 cups cherry tomatoes
- 1 cup mixed olives (green and black)
- 2 shallots, sliced
- 4 cloves garlic, minced
- 1 cup dry white wine
- 2 tbsp olive oil
- Salt and black pepper to taste
- 2 tsp herbs de Provence
Instructions
- Heat the olive oil in a heavy-bottom skillet over medium heat until shimmering.
- Season the chicken with salt and pepper, then brown skin-side down for about 5-7 minutes.
- Remove the chicken and sauté sliced shallots and minced garlic for 2-3 minutes.
- Add cherry tomatoes and olives, stirring gently for a minute.
- Pour in the white wine, scraping the pan to deglaze and allow to simmer.
- Braise the chicken in the skillet, cover, and cook on low for 35-40 minutes.
- Serve warm, drizzling the sauce over the chicken.
Notes
Make-ahead magic: Allow flavors to meld overnight. Can substitute chicken broth for white wine if desired. Avoid overcrowding the pan for proper browning.
