Description

Ingredients

  • Chicken: 4 boneless, skinless chicken breasts, cut into bite-sized pieces
  • Coconut Sauce: 1 can (14 oz) coconut milk, 1 tablespoon coconut oil, 1 medium onion, finely chopped, 3 cloves garlic, minced, 1 tablespoon ginger, grated, 1 teaspoon turmeric, 1 teaspoon paprika, 1 teaspoon cumin, salt and pepper to taste
  • Vegetables: 1 red bell pepper, sliced, 1 cup green beans, trimmed
  • Garnish: Fresh cilantro, chopped, lime wedges

Instructions

  1. In a large skillet, heat coconut oil over medium heat until shimmering.
  2. Add chopped onion and sauté for 3-4 minutes until translucent.
  3. Stir in minced garlic and grated ginger, cooking for an additional 1-2 minutes until fragrant.
  4. Add chicken pieces to the skillet, seasoning with salt, pepper, turmeric, paprika, and cumin. Cook for 5-7 minutes until chicken is browned on all sides.
  5. Pour in the coconut milk and bring to a gentle simmer. Reduce heat to low and cover, cooking for 15-20 minutes until chicken is cooked through.
  6. Add sliced bell pepper and green beans, cooking for another 5 minutes until vegetables are tender but still vibrant.
  7. Remove from heat and garnish with fresh cilantro and lime wedges before serving.
