- 2 lbs (900g) of boneless, skinless chicken thighs or breasts
- 1 teaspoon of salt
- ½ teaspoon of black pepper
- 1 teaspoon of smoked paprika
- 1 teaspoon of ground cumin
- ½ teaspoon of red pepper flakes (adjust to taste)
- 2 tablespoons of olive oil
- 1 medium onion, finely chopped
- 4 garlic cloves, minced
- 1 teaspoon of fresh ginger, grated
- 1 red or yellow bell pepper, sliced
- 1 can (13.5 oz) of full-fat coconut milk
- 1 cup of diced tomatoes (fresh or canned)
- 1 teaspoon of turmeric powder
- ½ teaspoon of ground coriander
- ½ teaspoon of chili powder (for extra heat, optional)
- Juice of 1 lime
- ¼ cup of fresh cilantro, chopped
Instructions
- Start by patting the chicken thighs or breasts dry with paper towels and cutting them into bite-sized pieces, seasoning with salt, black pepper, smoked paprika, ground cumin, and red pepper flakes. Let rest for about 10 minutes.
- Heat the olive oil in a large skillet over medium-high heat, then add the seasoned chicken, searing for about 5 minutes on each side until golden.
- Remove the chicken from the skillet and set aside. In the same skillet, add the onion, garlic, and ginger, sautéing until soft for about 3 minutes.
- Add the sliced bell pepper and continue sautéing until tender.
- Pour in the coconut milk and diced tomatoes, then stir in turmeric powder, ground coriander, and optional chili powder. Allow to simmer gently.
- Reintroduce the chicken to the skillet, coating in the sauce, and simmer for another 10 minutes. Finish by squeezing lime juice over the dish and garnish with chopped cilantro.
- Serve immediately, ideally with rice or flatbread.
Notes
This dish can be made ahead and reheats beautifully. Modify the spice levels to suit your palate.
