Description

A vibrant dish combining creamy coconut milk, tender chicken, and aromatic spices that brings the flavors of Brazil to your table.


Ingredients

  • 2 lbs (900g) of boneless, skinless chicken thighs or breasts
  • 1 teaspoon of salt
  • ½ teaspoon of black pepper
  • 1 teaspoon of smoked paprika
  • 1 teaspoon of ground cumin
  • ½ teaspoon of red pepper flakes (adjust to taste)
  • 2 tablespoons of olive oil
  • 1 medium onion, finely chopped
  • 4 garlic cloves, minced
  • 1 teaspoon of fresh ginger, grated
  • 1 red or yellow bell pepper, sliced
  • 1 can (13.5 oz) of full-fat coconut milk
  • 1 cup of diced tomatoes (fresh or canned)
  • 1 teaspoon of turmeric powder
  • ½ teaspoon of ground coriander
  • ½ teaspoon of chili powder (for extra heat, optional)
  • Juice of 1 lime
  • ¼ cup of fresh cilantro, chopped

Instructions

  1. Start by patting the chicken thighs or breasts dry with paper towels and cutting them into bite-sized pieces, seasoning with salt, black pepper, smoked paprika, ground cumin, and red pepper flakes. Let rest for about 10 minutes.
  2. Heat the olive oil in a large skillet over medium-high heat, then add the seasoned chicken, searing for about 5 minutes on each side until golden.
  3. Remove the chicken from the skillet and set aside. In the same skillet, add the onion, garlic, and ginger, sautéing until soft for about 3 minutes.
  4. Add the sliced bell pepper and continue sautéing until tender.
  5. Pour in the coconut milk and diced tomatoes, then stir in turmeric powder, ground coriander, and optional chili powder. Allow to simmer gently.
  6. Reintroduce the chicken to the skillet, coating in the sauce, and simmer for another 10 minutes. Finish by squeezing lime juice over the dish and garnish with chopped cilantro.
  7. Serve immediately, ideally with rice or flatbread.

Notes

This dish can be made ahead and reheats beautifully. Modify the spice levels to suit your palate.
