A creamy and spicy dip made with roasted cauliflower, perfect for parties and gatherings.
Ingredients

- 1 head of cauliflower, cut into florets
- 2 tablespoons olive oil
- 1/2 cup cream cheese, softened
- 1/2 cup Greek yogurt
- 1/2 cup buffalo sauce
- 1/2 cup shredded cheddar cheese
- 1/4 cup green onions, chopped
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, toss the cauliflower florets with olive oil, salt, and pepper.
- Spread the cauliflower on a baking sheet and roast for 25-30 minutes until golden brown.
- In a mixing bowl, combine the cream cheese, Greek yogurt, buffalo sauce, and half of the cheddar cheese.
- Add the roasted cauliflower to the mixture and stir until well combined.
- Transfer the mixture to a baking dish and top with the remaining cheddar cheese.
- Bake for an additional 15-20 minutes until bubbly and golden on top.
- Garnish with chopped green onions before serving.
Notes
- Serve with tortilla chips, celery sticks, or carrot sticks.
- Adjust the amount of buffalo sauce to your spice preference.
- This dip can be made ahead of time and baked just before serving.
