Ingredients

Scale
  • For the Filling:
    • 2 cups shredded cooked chicken
    • 1/2 cup buffalo sauce
    • 1/2 cup cooked and crumbled bacon
    • 1 cup shredded mozzarella cheese
  • For the Coating:
    • 1 cup all-purpose flour
    • 2 large eggs, beaten
    • 2 cups breadcrumbs
    • 1 teaspoon garlic powder
    • 1 teaspoon onion powder
    • 1/2 teaspoon salt
    • 1/2 teaspoon black pepper
  • For Frying:
    • Vegetable oil, for frying

Instructions

  1. In a large bowl, combine shredded chicken, buffalo sauce, crumbled bacon, and mozzarella cheese until well mixed.
  2. Using your hands, form the mixture into balls about 1.5 inches in diameter.
  3. Set up a breading station with three bowls: one for flour, one for beaten eggs, and one for breadcrumbs mixed with garlic powder, onion powder, salt, and pepper.
  4. Dredge each ball in flour, dip in the egg, and coat with breadcrumbs, ensuring they are fully covered.
  5. Heat vegetable oil in a deep fryer or large pot to 350°F (175°C).
  6. Carefully add the mozzarella bombs to the hot oil in batches, frying for 3-4 minutes or until golden brown and crispy.
  7. Remove from oil and drain on paper towels before serving.

Notes

  • Make-ahead: You can prepare the filling and form the bombs a day in advance. Store them in the refrigerator until ready to fry.
  • Storage: Leftover bombs can be stored in an airtight container in the fridge for up to 3 days.
  • Substitutions: Use ranch dressing instead of buffalo sauce for a milder flavor, or swap out mozzarella for cheddar cheese for a different taste.
