Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the dry ingredients until well combined.
  3. In another bowl, mix the melted butter, buttermilk, eggs, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined; do not overmix.
  5. Fold in the chopped pecans gently.
  6. Divide the batter evenly among the muffin cups, filling each about 2/3 full.
  7. In a small bowl, mix the chopped pecans with maple syrup and spoon the mixture on top of each muffin.
  8. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the muffins cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
