Description

A delicious and healthy twist on the classic Caesar salad, featuring roasted butternut squash and fresh kale.


Ingredients

Scale
  • 1 medium butternut squash, peeled and cubed
  • 4 cups kale, chopped
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup Caesar dressing
  • 1/4 cup croutons (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the butternut squash cubes with olive oil, salt, and pepper.
  3. Spread the squash on a baking sheet and roast for 25-30 minutes until tender.
  4. In a large bowl, combine the chopped kale and Caesar dressing, massaging the kale to soften it.
  5. Add the roasted butternut squash and toss gently.
  6. Top with grated Parmesan cheese and croutons if desired.
  7. Serve immediately and enjoy!

Notes

  • For a vegan version, substitute Parmesan cheese with nutritional yeast.
