A delicious and healthy twist on the classic Caesar salad, featuring roasted butternut squash and fresh kale.
Ingredients

- 1 medium butternut squash, peeled and cubed
- 4 cups kale, chopped
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup grated Parmesan cheese
- 1/4 cup Caesar dressing
- 1/4 cup croutons (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- Toss the butternut squash cubes with olive oil, salt, and pepper.
- Spread the squash on a baking sheet and roast for 25-30 minutes until tender.
- In a large bowl, combine the chopped kale and Caesar dressing, massaging the kale to soften it.
- Add the roasted butternut squash and toss gently.
- Top with grated Parmesan cheese and croutons if desired.
- Serve immediately and enjoy!
Notes
- For a vegan version, substitute Parmesan cheese with nutritional yeast.
- Feel free to add grilled chicken or chickpeas for extra protein.
- This salad can be made ahead of time; just add the dressing right before serving.
