- 4 large bell peppers
- 1 cup cooked rice
- 1 pound ground beef or turkey
- 1 can diced tomatoes (14.5 oz)
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon Cajun seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup shredded cheese (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds.
- In a skillet, cook the ground meat with onions and garlic until browned.
- Add the cooked rice, diced tomatoes, Cajun seasoning, salt, and pepper to the skillet and mix well.
- Stuff the bell peppers with the meat and rice mixture.
- Place the stuffed peppers in a baking dish and cover with foil.
- Bake for 30 minutes, then remove the foil and sprinkle cheese on top if desired.
- Bake for an additional 10-15 minutes until the cheese is melted and bubbly.
