  • For the Chicken:
    • 4 chicken thighs, boneless and skinless
    • 1/4 cup soy sauce
    • 2 tablespoons brown sugar
    • 1 tablespoon vegetable oil
  • For the Broth:
    • 4 cups chicken stock
    • 4 cloves garlic, minced
    • 1 tablespoon fresh ginger, grated
    • 1 tablespoon sesame oil
    • 2 green onions, chopped
  • For Serving:
    • 2 cups cooked jasmine rice
    • Fresh cilantro for garnish

Instructions

  1. In a bowl, mix soy sauce and brown sugar until dissolved. Add chicken thighs and marinate for at least 30 minutes.
  2. Heat vegetable oil in a large skillet over medium-high heat. Add marinated chicken and sear for 5-7 minutes on each side until caramelised and golden brown.
  3. Remove chicken from the skillet and set aside. In the same skillet, add minced garlic and grated ginger, sautéing for 1-2 minutes until fragrant.
  4. Pour in chicken stock and bring to a simmer. Return the chicken to the skillet and let it cook for an additional 15 minutes, or until fully cooked through.
  5. Stir in sesame oil and chopped green onions just before serving.
  6. Serve the chicken over a bed of jasmine rice, garnished with fresh cilantro.
