- 4 chicken thighs, boneless and skinless
- 1/4 cup soy sauce
- 2 tablespoons brown sugar

- For the Broth:
- 4 cups chicken stock
- 4 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 tablespoon sesame oil
- 2 green onions, chopped
- For Serving:
- 2 cups cooked jasmine rice
- Fresh cilantro for garnish
Instructions
- In a bowl, mix soy sauce and brown sugar until dissolved. Add chicken thighs and marinate for at least 30 minutes.
- Heat vegetable oil in a large skillet over medium-high heat. Add marinated chicken and sear for 5-7 minutes on each side until caramelised and golden brown.
- Remove chicken from the skillet and set aside. In the same skillet, add minced garlic and grated ginger, sautéing for 1-2 minutes until fragrant.
- Pour in chicken stock and bring to a simmer. Return the chicken to the skillet and let it cook for an additional 15 minutes, or until fully cooked through.
- Stir in sesame oil and chopped green onions just before serving.
- Serve the chicken over a bed of jasmine rice, garnished with fresh cilantro.
