Ingredients

  • Cauliflower: 1 large head, cut into florets
  • Onions: 2 medium, thinly sliced
  • Bacon: 6 strips, chopped
  • Cheddar cheese: 2 cups, shredded
  • Milk: 1 cup
  • Butter: 4 tablespoons
  • Flour: 1/4 cup
  • Salt: 1 teaspoon
  • Pepper: 1/2 teaspoon
  • Garlic powder: 1/2 teaspoon
  • Mustard powder: 1/2 teaspoon

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large pot, bring salted water to a boil and blanch the cauliflower florets for 3-4 minutes until slightly tender. Drain and set aside.
  3. In a skillet over medium heat, cook the chopped bacon until crispy, about 5-7 minutes. Remove and drain on paper towels.
  4. In the same skillet, add the sliced onions and cook until caramelized, about 10-15 minutes, stirring occasionally.
  5. In a saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1-2 minutes until golden.
  6. Gradually whisk in the milk, stirring constantly until the sauce thickens, about 5 minutes.
  7. Stir in the cheddar cheese, salt, pepper, garlic powder, and mustard powder until melted and smooth.
  8. In a large baking dish, combine the blanched cauliflower, caramelized onions, and bacon. Pour the cheese sauce over the top and mix gently.
  9. Bake in the preheated oven for 25-30 minutes until bubbly and golden on top.
