Description

A vibrant and fun cake that combines layers of colorful funfetti cake with a rich drip icing, perfect for celebrations.

Ingredients

Scale
  • 2 1/2 cups all-purpose flour
  • 2 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 5 large eggs
  • 1 tbsp vanilla extract
  • 1 cup whole milk
  • 1 cup rainbow sprinkles
  • 1 cup heavy cream
  • 8 oz semi-sweet chocolate, chopped
  • Food coloring (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease three 9-inch round cake pans.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In a separate bowl, cream together the butter and sugar until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition, then stir in vanilla.
  5. Gradually add the dry ingredients to the wet mixture, alternating with milk, and mix until just combined.
  6. Fold in the rainbow sprinkles and any food coloring if desired.
  7. Divide the batter evenly among the prepared pans and bake for 25-30 minutes or until a toothpick comes out clean.
  8. Let the cakes cool in the pans for 10 minutes before transferring to wire racks to cool completely.
  9. For the drip, heat the heavy cream until just simmering, then pour over the chopped chocolate and let sit for a few minutes before stirring until smooth.
  10. Once the cakes are cool, layer them with frosting and pour the chocolate drip over the top, allowing it to drip down the sides.
  11. Decorate with additional sprinkles and enjoy!
