  • Meatloaf:
    • 1.5 lbs ground beef
    • 1 cup breadcrumbs
    • 1/2 cup grated Parmesan cheese
    • 1/4 cup chopped fresh parsley
    • 1 large egg
    • 1/2 cup milk
    • 1 tsp garlic powder
    • 1 tsp onion powder
    • Salt and pepper to taste
  • Cheese Filling:
    • 1 cup shredded mozzarella cheese
    • 1/2 cup cream cheese, softened
    • 1/4 cup chopped green onions
  • Topping:
    • 1/2 cup ketchup
    • 1 tbsp brown sugar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine ground beef, breadcrumbs, Parmesan cheese, parsley, egg, milk, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  3. On a sheet of parchment paper, shape the meat mixture into a rectangle about 1 inch thick.
  4. In a separate bowl, mix together the mozzarella cheese, cream cheese, and green onions for the filling.
  5. Spread the cheese mixture evenly over the meat rectangle, leaving a small border around the edges.
  6. Carefully roll the meatloaf from one end to the other, sealing the edges to prevent the cheese from leaking out.
  7. Place the rolled meatloaf seam-side down in a baking dish.
  8. In a small bowl, mix ketchup and brown sugar, then spread it over the top of the meatloaf.
  9. Bake in the preheated oven for 1 hour, or until the internal temperature reaches 160°F (70°C).
  10. Let it rest for 10 minutes before slicing and serving.
