- 1 tsp vanilla extract
- 1 cup heavy cream (for frosting)
- 1/4 cup powdered sugar (for frosting)
- Maraschino cherries (for topping)
Instructions
- Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
- In a large bowl, mix together the flour, sugar, cocoa powder, baking soda, and salt.
- Add the softened butter, eggs, cherry cola, and vanilla extract to the dry ingredients and mix until well combined.
- Pour the batter into the prepared cupcake liners, filling each about 2/3 full.
- Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
- Let the cupcakes cool completely on a wire rack.
- In a separate bowl, whip the heavy cream and powdered sugar until stiff peaks form to make the frosting.
- Frost the cooled cupcakes with the whipped cream and top each with a maraschino cherry.
