Description

Cherry–Lime Chili Spark Jam is a vibrant blend of sweet cherries and zesty lime, with a subtle kick from chili peppers. The jam has a smooth, glossy texture that spreads easily, while the flavor profile dances between sweet, tangy, and spicy, creating a delightful experience for your taste buds.

    • 4 cups fresh cherries, pitted and halved
    • 1/2 cup fresh lime juice (about 4 limes)
  • Spices:
    • 1 teaspoon chili flakes (adjust to taste)
  • Sweeteners:
    • 2 cups granulated sugar
    • 1/4 cup honey
  • Preserving Agents:
    • 1 package (1.75 oz) fruit pectin

Instructions

  1. In a large pot, combine the pitted cherries and lime juice. Cook over medium heat until the cherries start to release their juices, about 5 minutes.
  2. Add the sugar and honey to the pot, stirring until fully dissolved. Bring the mixture to a rolling boil.
  3. Stir in the chili flakes and fruit pectin, and continue to boil for 1-2 minutes until the mixture thickens slightly.
  4. To test for doneness, place a spoonful of jam on a cold plate; if it holds its shape after cooling for a minute, it’s ready.
  5. Remove from heat and ladle the hot jam into sterilized jars, leaving about 1/4 inch of headspace.
  6. Seal the jars with lids and process in a boiling water bath for 10 minutes to ensure preservation.

  • This jam can be made ahead and stored in the refrigerator for up to 3 weeks or canned for longer shelf life.
  • Store in a cool, dark place if canned; refrigerate after opening.
