Ingredients

  • 1 teaspoon vanilla extract
  • 1 tablespoon ground cinnamon
  • 1/4 cup granulated sugar (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your 9×13 inch baking pan.
  2. Mix the flour, baking powder, baking soda, and salt together in a bowl.
  3. Cream the butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add the eggs one at a time, then stir in the vanilla extract.
  5. Combine the dry ingredients with the creamed mixture until just combined.
  6. Spread the dough evenly in the prepared baking pan.
  7. Mix the cinnamon with 1/4 cup granulated sugar and sprinkle it over the dough.
  8. Bake for 20-25 minutes until golden brown and a toothpick comes out clean.
  9. Cool in the pan for 10 minutes before transferring to a cooling rack.
  10. Cut into squares and serve.

Notes

For dairy-free option, substitute butter with coconut oil. Adjust the sugar types to make lower glycemic versions.
