- 2 cups wild rice
- 4 cups chicken broth
- 1 lb chicken breast, diced
- 1 cup mushrooms, sliced
- 1 cup celery, chopped
- 1 cup carrots, chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tsp thyme
- 1 tsp rosemary
- Salt and pepper to taste
- 1 cup shredded cheese (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large pot, combine wild rice and chicken broth. Bring to a boil, then reduce heat and simmer for 45 minutes.
- In a skillet, sauté onions, garlic, celery, carrots, and mushrooms until tender.
- Add the diced chicken to the skillet and cook until no longer pink.
- Mix the cooked wild rice with the sautéed vegetables and chicken.
- Season with thyme, rosemary, salt, and pepper.
- Transfer the mixture to a baking dish and top with shredded cheese if desired.
- Bake in the preheated oven for 25-30 minutes until heated through and cheese is melted.
Notes
- For a creamier texture, add a can of cream of mushroom soup.
- This dish can be made ahead of time and stored in the refrigerator before baking.
