Ingredients

  • 2 cups wild rice
  • 4 cups chicken broth
  • 1 lb chicken breast, diced
  • 1 cup mushrooms, sliced
  • 1 cup celery, chopped
  • 1 cup carrots, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tsp thyme
  • 1 tsp rosemary
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large pot, combine wild rice and chicken broth. Bring to a boil, then reduce heat and simmer for 45 minutes.
  3. In a skillet, sauté onions, garlic, celery, carrots, and mushrooms until tender.
  4. Add the diced chicken to the skillet and cook until no longer pink.
  5. Mix the cooked wild rice with the sautéed vegetables and chicken.
  6. Season with thyme, rosemary, salt, and pepper.
  7. Transfer the mixture to a baking dish and top with shredded cheese if desired.
  8. Bake in the preheated oven for 25-30 minutes until heated through and cheese is melted.

Notes

  • For a creamier texture, add a can of cream of mushroom soup.
  • This dish can be made ahead of time and stored in the refrigerator before baking.
