Description

A delicious and easy-to-make Chicken and Corn Skillet with Garlic Parmesan Rice that combines tender chicken, sweet corn, and flavorful garlic parmesan rice in one pan.


Ingredients

  • 1 lb chicken breast, diced
  • 1 cup corn kernels (fresh or frozen)
  • 1 cup rice
  • 2 cups chicken broth
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced chicken and cook until browned and cooked through.
  3. Stir in minced garlic and cook for an additional minute.
  4. Add corn and rice to the skillet, stirring to combine.
  5. Pour in chicken broth and bring to a boil.
  6. Reduce heat, cover, and simmer for about 20 minutes or until rice is cooked.
  7. Stir in Parmesan cheese and season with salt and pepper.
  8. Garnish with fresh parsley before serving.

Notes

  • For a spicier version, add red pepper flakes.
