Ingredients

  • 2 cups cooked shredded chicken
  • 1 cup enchilada sauce
  • 1 cup shredded cheese
  • 8 corn tortillas
  • 1/2 cup diced onions
  • 1/2 cup sour cream
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, heat olive oil over medium heat and sauté onions until translucent.
  3. Add shredded chicken, cumin, garlic powder, salt, and pepper to the skillet and mix well.
  4. Warm the corn tortillas in a separate pan or microwave until pliable.
  5. Spread a spoonful of enchilada sauce on each tortilla, add the chicken mixture, and roll them up.
  6. Place the rolled tortillas seam-side down in a baking dish.
  7. Pour the remaining enchilada sauce over the top and sprinkle with shredded cheese.
  8. Bake in the preheated oven for 20-25 minutes until the cheese is melted and bubbly.
  9. Serve hot with sour cream on the side.

Notes

  • For extra flavor, add chopped cilantro on top before serving.
