Indulge in the creamy richness of tender chicken smothered in a savory mushroom gravy, served over a bed of fluffy mashed potatoes. The dish offers a delightful contrast of textures, with the smooth potatoes complementing the hearty, umami-packed sauce.

  • For the Chicken:
    • 4 boneless, skinless chicken breasts (about 1.5 lbs)
    • 1 teaspoon salt
    • 1/2 teaspoon black pepper
    • 2 tablespoons olive oil
  • For the Mushroom Gravy:
    • 8 oz mushrooms, sliced
    • 1 medium onion, diced
    • 2 cloves garlic, minced
    • 2 cups chicken broth
    • 1 tablespoon Worcestershire sauce
    • 1 tablespoon soy sauce
    • 1/4 cup heavy cream
    • 2 tablespoons all-purpose flour
    • 1 tablespoon fresh thyme, chopped
  • For the Mashed Potatoes:
    • 2 lbs russet potatoes, peeled and cubed
    • 1/2 cup milk
    • 1/4 cup butter
    • Salt and pepper to taste

Instructions

  1. Season the chicken breasts with salt and pepper.
  2. In a large skillet, heat olive oil over medium heat. Add the chicken and cook for 6-7 minutes on each side until golden brown and cooked through. Remove from skillet and set aside.
  3. In the same skillet, add the diced onion and sliced mushrooms. Sauté for 5-6 minutes until softened.
  4. Add minced garlic and cook for an additional minute until fragrant.
  5. Sprinkle flour over the mushroom mixture and stir to combine, cooking for 1-2 minutes.
  6. Gradually pour in the chicken broth, stirring constantly to avoid lumps. Add Worcestershire sauce, soy sauce, and thyme. Bring to a simmer and cook for 5 minutes until thickened.
  7. Stir in heavy cream and return the chicken to the skillet, coating it in the gravy. Simmer for another 2-3 minutes.
  8. Meanwhile, boil the cubed potatoes in salted water for 15-20 minutes until tender. Drain and return to the pot.
  9. Add milk, butter, salt, and pepper to the potatoes. Mash until smooth and creamy.
  10. Serve the chicken with mushroom gravy over a generous scoop of mashed potatoes.

  • This dish can be made ahead of time; simply reheat the chicken and gravy on the stove before serving.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • For a lighter version, substitute heavy cream with half-and-half or omit it entirely.
