- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 cups chicken broth

Instructions
- Season the chicken breasts with salt and pepper.
- In a large skillet, heat olive oil over medium heat. Add the chicken and cook for 6-7 minutes on each side until golden brown and cooked through. Remove from skillet and set aside.
- In the same skillet, add the diced onion and sliced mushrooms. Sauté for 5-6 minutes until softened.
- Add minced garlic and cook for an additional minute until fragrant.
- Sprinkle flour over the mushroom mixture and stir to combine, cooking for 1-2 minutes.
- Gradually pour in the chicken broth, stirring constantly to avoid lumps. Add Worcestershire sauce, soy sauce, and thyme. Bring to a simmer and cook for 5 minutes until thickened.
- Stir in heavy cream and return the chicken to the skillet, coating it in the gravy. Simmer for another 2-3 minutes.
- Meanwhile, boil the cubed potatoes in salted water for 15-20 minutes until tender. Drain and return to the pot.
- Add milk, butter, salt, and pepper to the potatoes. Mash until smooth and creamy.
- Serve the chicken with mushroom gravy over a generous scoop of mashed potatoes.
