- 1 cup frozen mixed vegetables
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons butter
- 2 tablespoons flour
- 1 cup chicken broth
- 1 teaspoon thyme
- Salt and pepper to taste
- 4 cups mashed potatoes
- 1/2 cup milk
- 1/2 cup shredded cheese (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- Sauté the onions and garlic in a large skillet with melted butter over medium heat for 3-4 minutes.
- Create a roux by sprinkling the flour into the skillet and stirring for 1 minute.
- Whisk in the chicken broth and bring to a gentle simmer.
- Incorporate the chicken, mixed vegetables, thyme, salt, and pepper.
- Assemble the filling in a baking dish.
- Top with the mashed potatoes and smooth out the surface.
- Add cheese on top if desired.
- Bake for 25-30 minutes until golden brown and bubbly.
- Cool for 5 minutes before serving.
