Ingredients

  • 1 cup frozen mixed vegetables
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1 cup chicken broth
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 4 cups mashed potatoes
  • 1/2 cup milk
  • 1/2 cup shredded cheese (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Sauté the onions and garlic in a large skillet with melted butter over medium heat for 3-4 minutes.
  3. Create a roux by sprinkling the flour into the skillet and stirring for 1 minute.
  4. Whisk in the chicken broth and bring to a gentle simmer.
  5. Incorporate the chicken, mixed vegetables, thyme, salt, and pepper.
  6. Assemble the filling in a baking dish.
  7. Top with the mashed potatoes and smooth out the surface.
  8. Add cheese on top if desired.
  9. Bake for 25-30 minutes until golden brown and bubbly.
  10. Cool for 5 minutes before serving.
