Description

    • 4 large russet potatoes, cut into fries

  • For the Chili:
    • 1 pound ground beef
    • 1 can (15 oz) kidney beans, drained and rinsed
    • 1 can (15 oz) diced tomatoes
    • 1 small onion, diced
    • 2 cloves garlic, minced
    • 2 tablespoons chili powder
    • 1 teaspoon cumin
    • Salt and pepper, to taste
  • For the Toppings:
    • 2 cups shredded cheddar cheese
    • 1/4 cup sliced jalapeños (optional)
    • 1/4 cup chopped green onions (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, toss the cut fries with vegetable oil and salt until evenly coated.
  3. Spread the fries in a single layer on a baking sheet and bake for 25-30 minutes, flipping halfway through, until golden and crispy.
  4. While the fries are baking, heat a large skillet over medium heat and add the ground beef, cooking until browned.
  5. Add the diced onion and garlic to the skillet, cooking until the onion is translucent.
  6. Stir in the kidney beans, diced tomatoes, chili powder, cumin, salt, and pepper. Simmer for 15-20 minutes until thickened.
  7. Once the fries are done, remove them from the oven and top with the chili and shredded cheese.
  8. Return to the oven for an additional 5 minutes, or until the cheese is melted and bubbly.
  9. Remove from the oven and garnish with jalapeños and green onions, if desired. Serve immediately.
