- 4 large russet potatoes, cut into fries

- For the Chili:
- 1 pound ground beef
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) diced tomatoes
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 tablespoons chili powder
- 1 teaspoon cumin
- Salt and pepper, to taste
- For the Toppings:
- 2 cups shredded cheddar cheese
- 1/4 cup sliced jalapeños (optional)
- 1/4 cup chopped green onions (optional)
Instructions
- Preheat your oven to 425°F (220°C).
- In a large bowl, toss the cut fries with vegetable oil and salt until evenly coated.
- Spread the fries in a single layer on a baking sheet and bake for 25-30 minutes, flipping halfway through, until golden and crispy.
- While the fries are baking, heat a large skillet over medium heat and add the ground beef, cooking until browned.
- Add the diced onion and garlic to the skillet, cooking until the onion is translucent.
- Stir in the kidney beans, diced tomatoes, chili powder, cumin, salt, and pepper. Simmer for 15-20 minutes until thickened.
- Once the fries are done, remove them from the oven and top with the chili and shredded cheese.
- Return to the oven for an additional 5 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and garnish with jalapeños and green onions, if desired. Serve immediately.
